Well, today is your lucky day! I found vietnamese mint at Bunnings, bought some free range eggs and made the egg dish that use to be on the breakfast menu at Waterlily, Margate.
A quick run down of this dish. Jasmine rice, two fried eggs, generous heap of chilli jam (Matchett's found at Feel Goodz cafe in Woody Point is my favourite), crunchy fried shallots and topped with fresh vietnamese mint. It only takes to 2 minutes to make and is worth at least double that.
